Cheesecake Chronicles #7 (Dec 27 2003 15:51 GMT) - Well, the chocolate-chip cheesecake was served for dessert last evening (Christmas Day). In general, I was very happy with the outcome, but I did learn a few things: 1. I will continue to not pre-cook the crust. The double-thick crust that I made for this cheesecake did come out with a slightly burned look/flavor that was mild but noticable. |

Cheesecake Chronicles #6 (Dec 27 2003 15:51 GMT) - The last thing I needed to figure out was how to do a nice thick graham cracker crust for my chocolate chip cheesecake. I started with the base recipe from Cook's Illustrated: 1 package regular graham crackers, ground in food processor 1 tablespoon sugar 5 tablespoons butter, melted The only problems with this recipe is that it resulted in a crust that just wan't thick enough. Most people I know really like the taste of the crust, so why use such a skimpy amount? Here is what I did: |

Cheesecake Chronicles #5 (Dec 27 2003 15:51 GMT) - In order to get the chocolate chips to not all melt and settle on the bottom of the cheesecake, I made two modificaitons: 1. I used the mini-sized semisweet chocolate chips. 2. Befure use, I lighly coated the chips with baking flour in a zip-loc bag. |

Suicide Bombers, Part II (Dec 27 2003 15:51 GMT) - I got an interesting comment on my post about the moral legitimacy of suicide bombers. In that post, I acknowledged that one difficulty in condemning intentional attacks on civilians is the fact that the past century saw an increase in attacks upon civilian populations (or, more appropriately, the use of weapons that were incapable of making any realistic distinctions between combatants and non-combatants). I specifically singled out for discussion the use of the atomic bomb on Japan and the widespread bombings in Germany (which were themselves, of course, preceded by the bombings of England by the Germans). GPXView (Dec 27 2003 15:50 GMT) - GPXView is a useful PocketPC2002 program that will read in gpx files. No need to convert to ebooks or anything. The only downside I have noticed so far is that it is not quite perfect in measuring distances away from "home". Great for keeping a copy of nearest cache's on the pda though. |
